Romanesco Squash, or Costata Romanesco Squash, is an Italian heirloom variety of summer squash that is celebrated for its sweet-nutty flavor inside slightly raised, speckled green ribbed skin. It can be picked tiny and eaten whole, or left on the vine until 6-10" long. The large male blossoms can be stuffed, breaded, fried and eaten.
