Grow Heirloom Salsify - Plant Mammoth Sandwich Island Salsify Seeds
Dating back to the 1800s where it is native to Europeans who would cook Salsify in soups and stews. All parts of the plant are edible and deserves its place in every period or permaculture garden. Plant in the spring and dig up roots in the fall and into the winter. Cold hardy and reseeds, so dead-head to control spreading and either eat flowers or harvest seeds for next spring.

Prefers deep, well-drained soil. Plant in early spring, as soon as the ground can be worked. Loosen soil down to 18" so that roots will have nice, loose soil to stretch into. Plant 3 seeds every 3" - 6" and cover with no more than 1" soil. Once plants are established, thin seedlings to one plant every 3" - 6".
Roots are ready to harvest in fall, through winter. Very cold hardy, and flavor improves after several frosts. Dig roots in late fall before ground freezes. In milder areas, roots can be kept in the soil until the following spring, harvesting as needed.
