Arugula is a cool-season crop that does best in a sunny location in cooler temperatures, roughly 60-65F. This is a fun crop to grow, as you can harvest arugula leaves at really any stage from small, tender greens, to larger more mature leaves.
In just 10-14 days, arugula has developed their first set of leaves and can be harvested as nutritionally packed micro greens. For more mature and peppery leaves, harvest arugula 30 - 50 days from seeding.
Arugula grows in average soil, dig about 4” deep, work in some compost and organic matter and plant your arugula by sprinkling it in and covering with a layer of soil. Expect to see sprouts in a week to 10 days.
Because the seeds are so small, the best you can do is sprinkle the seeds onto the soil, and then as the seedlings emerge, you can then begin to thin them out. Don’t just toss those seedlings that you just thinned out – they’re a great addition to salads and they’re packed with nutrients. 4-6 inches between arugula plants is recommended, but keep in mind that arugula doesn’t mind over-crowding. If you don’t have the heart to thin out the seedlings, then leave them be.
Keep your arugula well watered but not soggy. If your planting area gets full sun all day long, you may want to protect this crop with some afternoon shade.
Harvest your arugula in the morning when it is the crispiest. Use a knife to cut the leaves, or just pull the entire plant out by the roots.
Home-grown arugula makes a great addition to your salads and sandwiches, you will want to plant in succession to ensure that you have a constant harvest. Be sure to seed every 2-3 weeks and this way you won’t be without fresh arugula during the spring time. Enjoy!
